One pot recipes are many people's favorites. It's straightforward, less mess in kitchen, and less cleaning up to do afterwards. This dish quickly became one of our easy dinner go to. It was full of flavors, comforting, and super easy to make.
One Pot Miso Cod 一鍋料理味增烤鱈魚

Cod fillet, ½ lb
Red miso, 90g
Mirin, 40g
Brussel sprout 1 lb, washed and halved
Olive oil
Salt and pepper, for seasoning
Instructions
Mix the miso and mirin into a paste. Rub the paste all over the cod. Cover and set in the fridge for at least an hour to overnight.
30 minutes before cooking. Preheat the oven to 400F.
Wipe extra miso paste off the cod, if preferred you can leave a little bit on, but keep in mind miso tends to burn easily in a high temperature oven.
Place the halved brussel sprouts in a cast iron or an oven safe pan with a ledge. Coat with some olive oil, season with some salt and pepper. Arrange the brussel sprout into one single layer if possible.
Place the miso marinated cod on top of the brussel sprouts.
Place the pan in the oven and bake for about 20-23 minutes until cooked through.
Serve immediately and directly in the pan if desired!
